A very yummy dinner

I probably read more food and cooking blogs than book and writing blogs these days, and one of my favorites is Dutch Girl Cooking – probably because of her very cool recipe cards and pictures, but also, how can you not love a recipe that calls for a “knob of butter?”

Last night I made her Twice Baked Beef Potatoes, and though @cuppacafe looked at them dubiously when he got home, when he dug in, he said, “Hey, these aren’t bad.” I took that as a compliment. Plus, he was right!

Now, I didn’t use a leek because that’s just not something I would have on hand. Instead, I shredded one yellow squash. Neither did I use curry powder (don’t even own any) or HP sauce, since I have no clue what that is in the Netherlands. I also added some young green peas instead of corn because every shepherd’s pie I’ve ever made has had peas. And that’s basically what this is. Individual shepherd’s pies.

I only baked two potatoes, seasoning the skins with olive oil and kosher salt, so I still have some of the meat mixture left over. @cuppacafe ate two halves, I ate one and had the other for breakfast this morning. It looks like a lot of steps, but it was fast and fairly easy. I was going to take a picture when they were done, but was starving and forgot. I love recipes with a lot of leeway as this one has, so I recommend!

    I happened on your name by chance. I remember when you got you first call from Harlequin because it was on TV for a new author. 10 years ago or more? Looks like you’ve become very successful. Congratulations.

    That is a very neat blog and those potatoes look really good!! I love cooking blogs too, have a few I visit daily!! I’m adding this to the list of new recipes to try! :)

      I love her blog. It’s just fun to see her ingredients as many of them I’ve never hear of. I’ve made her Dutch Meatballs twice and they’re really good, though the gravy never turns out right!

    Thanks for this link!! Right up my street being half Dutch girl myself. And hey, I always have leeks on hand, as well as HP sauce :) It’s a well known sauce in the UK and Canada as well as Holland and South Africa. My dad used to have it with fried eggs for breakfast. (He’s the Brit side of my Dutch half)

      I looked up HP Sauce on Wiki and they referred to A1 steak sauce and Worcestershire sauce, so I get the basic idea, but have never seen it!

    I love food blogs. Suzanne McMinn always has incredible recipes with pics that make me drool. Today she’s got Italian Wedding Cake up and I had to sit on my hands so I wouldn’t leap up and make it. Culinary Cory’s awesome, too.

        These were awesome. Really really loved them, and the salted skins were super yum!
